National Cookie Day (but who needs an excuse to eat cookies?)

As the weather starts to grow colder, my kids begin requesting to make Butterballs. These delicious no-bake cookies are their favorite Holiday treat.

In honor of National Cookie Day, and in preparation to watch the lighting of the Rockefeller Christmas Tree, the older kids whipped up a double batch after school today.

Butterballs

Ingredients:

1 pound unsalted butter

6 cups quick oats

1/4 cup water

1/2 cup plus 1 tbsp. cocoa

2 cups sugar

1 tbsp. vanilla

3/4 cup powdered sugar

 

Directions:

  • Soften butter
  • Combine all ingredients, except powdered sugar, in a large bowl.
  • Roll mixture into 1/4 inch balls. (Balls should hold shape firmly.)
  • Roll balls in powdered sugar.
  • Chill and serve.
