Quick and Easy Blueberry Muffins

Muffins are an easy breakfast treat. Made the night before or fresh out of the oven, they are best served warm. Make and extra batch to freeze, for a quick breakfast as you are running out the door. 


To heat up the muffins, wrap with foil and heat for four to five minutes in a 450 degree preheated oven or wrap in a paper towel and heat in the microwave until warmed.

Blueberry Muffins

  • 1 ½ cups flour
  • 1 teaspoon baking powder
  • ¼ cup sugar
  • ¼ cup light brown sugar
  • ¾ cup butter
  • 1 egg
  • ½ cup milk
  • 1 ½ cups blueberries (fresh or frozen)
  1. Preheat oven to 350 degrees.
  2. Mix together butter and both sugars.
  3. Add milk.
  4. Stir in dry ingredients.
  5. Stir in blueberries.
  6. Spoon batter into prepared muffin pans.
  7. Bake 20 – 25 minutes.
